MEAT(LOAF) & POTATOES W/ PEPPERS & ONIONS

On the day before Thanksgiving, you can't show up the banquet, so we went with a simple meal of meatloaf. We had some peppers pre-cut and frozen from our garden and picked up the ground sirloin, which happen to be in abundance as everyone was buying bird and pork. The market was all a buzz, and we look forward to showing you our mashed potato contribution to tomorrow's meal.

Eggplant Sticks with Babaganoush and Mixed Green Salad

We typically follow the rule that if it's breaded, it's automatically going to be delicious, and also tandemly bad for our health. Well the script was flipped on this one and we broke all the rules making a fried and breaded vegetable that turned out to be both delicious and somehow good for us...yeah I know what you're thinking...the twilight zone right...too good to be true. Well our taste buds will contest that it wasn't too good to be true, and we honestly just couldn't stop ourselves from eating healthy.

PROSCIUTTO WRAPPED CHICKEN W/ SCALLIONS & RICE

We've decided that almost all meats can taste amazing with the right salts and peppers. We thank Herbs & Spice and Everything Nice for this lesson. Their Washington Sea Salt is unbelievable. It's sweet. Have you ever tasted a sweet salt?

SPICY PENNE LASAGNA CASSEROLE WITH SAUSAGE


One of my favorite dishes is Lasagna, and this dish is basically the same just without the flat noodles.  Made to satisfy the italian spice demon in our bellies that was becoming angry from lack of attention, this number quickly rose to the top of the charts muscling it's way past so many of our "lite" summer fare offerings.

We actually decided to bake this glorious casserole in our toaster oven to cut back on the heat in the kitchen.  We made the red sauce a day ahead and let it sit overnight for the flavors to fully develop.  We knew that this was more of a winter dish but sometimes you cant deny classic home made stick to your ribs casseroles, especially lasagna and any of its close relatives.  What really stood out in this concoction was the ricotta.  It was the sweetest ricotta we've ever tasted with the perfect amount of sourness to it, that worked splendidly to balance out the spicy zing we added to the recipe.  It's so delicious you could eat it by the spoonful straight out of the container, oops did I do that.  Maybe when it gets closer to holiday time, the Feed Me Findlay Dynamic Duo will venture out into dessert world and put our beloved ricotta to the test in a new arena.  Yup-yup, as always fresh makes it best!

World Food Bar!  What can we say, amazingly beautiful precooked foods that really give purpose to the glass cases they're behind, because your mouth will surely water.  We definitely suggest trying any one of thier fabulous entree's and pair it with a few of your simple sides at home to create a fast high end meal.

LIGHTLY FRIED CHICKEN W/ TOMATO MUSHROOM SAUTE OVER FETTICINI

Fried chicken is one of our absolute favorite foods. However, it really isn't the best thing to eat as often as we would like to. So we toned it down a notch here and lightly breaded it with Panko and sauteed it in olive oil. Couple that with the tomatoes, mushrooms and fresh homemade pasta, and you won't miss Grandma's fried chicken.

Since eating an entire cantaloupe between two people is a bit much, a Mexican trick is to blend the fruit with ice and water for a light version of a smoothie.  Fresh makes it best.

PARSLEY LEMON ZEST SOLE W/ SUGAR SNAP PEAS & BASMATI RICE

We started this culinary adventure at the farmers shed and could not possibly pass on a heaping bag of delicious sugar snap peas after sampling the raw product.  Add a couple lemons and some of our own freshly clipped parsley from the garden and voila!  Both sides of the fish were patted with the chopped parsley lemon zest mix, and then pan fried in a couple tablespoons of garlic infused olive oil for around 5 min per side depending on the thickness of the fillet.

Recipe from the Modern Fast Food cookbook.

This dish took a total of 20 min to throw together (with 2 people working).  The fish was delicious and very soft and juicy.  The mild taste of this whitefish took well to the simple flavors of the rub and added its own sweet buttery taste.  I think we're going to be ramping up our seafood consumption here over the summer after having this fine catch.  Fresh makes it best.

Onion, Garlic & Herb Saute over Handmade Garlic Linguini

Calorie counters, look away. This pasta made by "Ohio City Pasta" at the Cleveland Farmer's Market and distributed by "Anything's Pastable" at Findlay Market is to die for. The freshness and natural flavors of the pasta need not need anything fancy to accompany it; yet I am sure many options abound from pesto to marinara to clam sauce. You really can't mess this one up.

It must be noted that there is a wide variety of pastas available, from angel hair to linguini and spinach flavored to plain. We're not sure that we can ever go back to Bertoli.

Ah, grill season. We were so glad when the temperatures finally opened the grill. Our favorite grill session is grilled pizzas. If you haven't tried this it is a must. Not only is it so fresh and delicious, but it is really fast. Just prep your ingredients, roll out the dough, grill for 5 minutes and you're done.

ROASTED ROOT VEGETABLES W/ MIXED GREENS & PEAR SALAD & EGGS MADE TO ORDER


Sunday we had a few friends over for brunch, nothing too extravagant...just some potatoes, greens and eggs.  What made the potatoes special was the mixed variety, and of course the curve ball rutabaga thrown in there for an extra zip.  We've never eaten rutabaga before, but it was quite nice, adding a sort of tart twist to the otherwise sweet and savory blend.  All we can say at this point is that homemade strawberry jam is a must, at least once in a lifetime and since it's so easy we suggest a few more than that.  It turned out to be especially delicious over bagels and cream cheese.

Shitake & Olive Medley White Pizza

If you like good bread and fresh cheese, that pretty much means you love pizza.  You can basically dial in a pizza however you wish...loaded with ingredients or light, red or white sauce, all meat all veggie or mixed, whatever you dream up is pretty much possible.  Our dream consisted of a white pizza using olive oil as the sauce and topped with shitake mushrooms and a medley of olives.

Here it is the end of March, and we woke up to a cold rainy day. We thought the oatmeal was retired for the year, so we had to spruce it up with a fresh spring apple. However, it did require a coat an umbrella to run over to the market for the apple.

There are very many ways to make this dish with the variety of peppers and stuffings available. We went with what we had on hand, and took this towards a south of the border flavored meal.
