SRING FRESH FEAST

It was our good friend's birthday and he loves his birthday almost as much as he loves food, so we were up for a challenge.  This meal was inspired by all things spring, and Findlay offered us the freshest selections to create this 4 course celebration. 


















FIRST COURSE: CRAB CAKES

Ingredients / Vendor:

New England Crab Meat / Luken's
Cream Cheese / Gibb's Cheese and Sausage
Parmesan / Silverglade's
Eggs / Busch's 
Sour Cream & Butter/ Gibb's Cheese and Sausage
Orange & lemon peel / Madison's
Chives / Madison's
Salt & Cayenne Pepper / Herbs and Spice and Everything Nice
Panko / Saigon Market





SECOND COURSE: GREEN PEA SOUP WITH TARRAGON

Ingredients / Vendor:

Peas / Madison's
Olive oil / Dean's Mediterranean
Shallots / Madison's
Vegetable Broth  / Madison's
Tarragon / Madison's
Homemade Yogurt / Dean's Mediterranean









THIRD COURSE: SALMON, ASPARAGUS & NEW POTATO SALAD WITH CHIVE VINAIGRETTE AND FRIED CAPERS

Rice Vinegar / Saigon Market
Honey / Gibb's Cheese & Sausage
Asparagus, Spring Mix / Madison's

FOURTH COURSE: HALIBUT ON MASHED FAVA BEANS WITH MINT

Some days are better than others, and this was one of those better days. Each bite of this extraordinary meal was a conversation amongst us. We are wondering if a week is long enough to wait to make it again.
